Ingredients

  • 3 cups rotisserie chicken, shredded or chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 celery stalks, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Remove skin and bones from the rotisserie chicken, then chop or shred the meat into bite-sized pieces. Place in a large mixing bowl.
  2. Finely chop the celery, red onion, and parsley.
  3. In a separate small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  4. Pour the dressing over the chicken and vegetables. Toss until everything is evenly coated.
  5. Taste and adjust the seasoning as needed.
  6. Chill in the refrigerator for at least 30 minutes for best flavor.
