Ingredients

  • 3 ripe bananas, mashed
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk or buttermilk
  • For the cinnamon swirl:
  • 1/3 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter
  • For the glaze (optional):
  • 1/2 cup powdered sugar
  • 12 tablespoons milk or cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth. Add melted butter, eggs, vanilla extract, and milk. Mix until well combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.
  5. In a small bowl, mix brown sugar, cinnamon, and melted butter to make the swirl mixture.
  6. Pour half of the batter into the prepared pan. Spoon half of the swirl mixture over the batter and use a knife or skewer to swirl gently.
  7. Repeat with remaining batter and swirl mixture on top, swirling again.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. If using glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bread before slicing.
