Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 34 tablespoons ice water
  • 1/4 cup unsalted butter, softened (for filling)
  • 1/3 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup powdered sugar (for glaze, optional)
  • 12 tablespoons milk or cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time, mixing until the dough comes together.
  4. Form dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  5. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. In a small bowl, mix softened butter, brown sugar, and cinnamon to create the filling.
  7. Roll out chilled dough on a floured surface into a rectangle about 1/8-inch thick.
  8. Spread cinnamon mixture evenly over the dough.
  9. Roll up the dough from the long side into a log, then slice into 1-inch pieces.
  10. Place pastries on the baking sheet, spaced slightly apart.
  11. Bake for 18–22 minutes, or until golden brown.
  12. Optional: Whisk together powdered sugar, milk, and vanilla to make a glaze, then drizzle over cooled pastries.
