Chocolate Chip Coffee Cookies are soft, chewy cookies infused with coffee flavor and loaded with chocolate chips. Perfect for coffee lovers, they offer a rich, indulgent twist on the classic chocolate chip cookie.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tbsp instant coffee or espresso powder
  • 2 tbsp hot water
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Dissolve instant coffee or espresso powder in hot water, then add to butter-sugar mixture along with eggs and vanilla extract. Mix well.
  5. Gradually stir in the dry ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Scoop dough onto prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 9–11 minutes, until edges are golden and centers are still soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill dough for 30 minutes for thicker cookies.Use dark chocolate chips for a more intense flavor.Add chopped nuts for extra texture.Slightly underbake for softer cookies.Store in an airtight container to maintain freshness.
