Chocolate Baked Oatmeal is a rich, dessert-like breakfast made with wholesome ingredients like oats, cocoa powder, and natural sweeteners. Perfect for meal prep, it’s warm, satisfying, and can be enjoyed fresh out of the oven or reheated throughout the week.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/4 cup melted coconut oil or butter
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, mix oats, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, maple syrup, vanilla extract, and melted coconut oil or butter.
  4. Pour wet ingredients into the dry ingredients and stir until combined.
  5. Fold in chocolate chips, if using.
  6. Spread mixture evenly into the prepared baking dish.
  7. Bake for 30–35 minutes, or until set and slightly firm in the center.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

For extra sweetness, mash in ripe bananas before baking.For a mocha twist, add instant coffee to the wet mixture.To make vegan, use flax eggs and plant-based milk.Serve warm with fresh fruit, yogurt, or nut butter.
