4 boneless, skinless chicken breasts (or thighs)
2 tablespoons olive oil
2 chipotle peppers in adobo sauce, chopped
2 tablespoons adobo sauce (from the chipotle can)
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon onion powder
1 tablespoon lime juice
Salt and pepper, to taste
Prepare the marinade: In a medium bowl, mix together the olive oil, chopped chipotle peppers, adobo sauce, garlic, cumin, paprika, chili powder, onion powder, lime juice, salt, and pepper until well combined.
Marinate the chicken: Place the chicken breasts (or thighs) in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2-4 hours, or overnight for a more intense flavor.
Cook the chicken:
Grill: Preheat the grill to medium-high heat and cook the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F (74°C).
Stovetop: Heat a skillet over medium heat with a little olive oil and cook the chicken for 6-7 minutes per side, or until golden and cooked through.
Bake: Preheat the oven to 400°F (200°C). Place the chicken on a baking sheet and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Rest the chicken: Once the chicken is cooked, remove it from the heat and let it rest for 5 minutes to keep it juicy.
Serve and enjoy: Slice the chicken against the grain into strips or bite-sized pieces. Serve in tacos, burritos, bowls, or over a salad. Garnish with fresh cilantro and a squeeze of lime juice for extra flavor.
For a spicier version, add more chipotle peppers or a dash of hot sauce to the marinade.Substitute chicken thighs for a juicier option—just adjust the cooking time.To make a vegetarian version, try grilled portobello mushrooms, tofu, or cauliflower instead of chicken.Add sautéed peppers and onions as a topping for more flavor and texture.
