Chipotle chicken is a bold, smoky, and slightly spicy dish made with chipotle peppers in adobo, garlic, lime, and spices. Perfect for grilling or pan-searing, it’s a versatile protein that pairs beautifully with tacos, bowls, salads, and more.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 23 chipotle peppers in adobo sauce
  • 2 cloves garlic
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a blender or food processor, combine chipotle peppers, garlic, lime juice, olive oil, cumin, smoked paprika, oregano, salt, and black pepper. Blend until smooth.
  2. Place the chicken in a large bowl or zip-top bag and pour the marinade over it. Toss to coat thoroughly.
  3. Cover and marinate in the refrigerator for at least 30 minutes, or ideally 2–4 hours.
  4. Preheat a grill, grill pan, or skillet over medium-high heat.
  5. Remove the chicken from the marinade and cook for 5–7 minutes per side, or until fully cooked and slightly charred.
  6. Let the chicken rest for 5 minutes before slicing and serving.

Notes

Use fewer chipotle peppers or remove seeds for a milder flavor.Add Greek yogurt to the marinade for extra tenderness and creaminess.Double the marinade and freeze half with raw chicken for an easy future meal.This chicken is perfect for tacos, bowls, wraps, salads, and sandwiches.Use chipotle powder (1–2 tsp) if you don’t have canned chipotles.
