These chipotle chicken flautas are crispy rolled tortillas filled with smoky, spicy shredded chicken and cooked until golden perfection. Ingredients

  • Cooked shredded chicken
  • Chipotle peppers in adobo sauce
  • Garlic, minced
  • Onion, finely chopped
  • Cumin
  • Paprika
  • Salt
  • Black pepper
  • Tortillas (corn or flour)
  • Shredded cheese (optional)
  • Vegetable oil (for frying or brushing)
  • Sour cream
  • Salsa
  • Lettuce, shredded
  • Avocado or guacamole

Instructions

  • In a skillet, sauté onion and garlic until softened.
  • Add shredded chicken, chopped chipotle peppers, adobo sauce, cumin, paprika, salt, and pepper. Stir until well combined and heated through.
  • Warm tortillas slightly to make them flexible.
  • Spoon chicken mixture onto each tortilla and roll tightly.
  • Secure with toothpicks if needed.
  • Fry in hot oil until golden and crispy, or brush with oil and bake at 200°C (400°F) until crisp.
  • Drain on paper towels if frying.
  • Serve hot with sour cream, salsa, lettuce, and avocado or guacamole.

Notes

Don’t overfill tortillas to keep them from unrolling.Place seam-side down when cooking for better hold.Adjust chipotle amount based on your spice preference.
