Chickpea soup is a warm, hearty, and comforting one-pot meal made with protein-rich chickpeas, vegetables, herbs, and flavorful broth. It’s simple, nourishing, and perfect for cozy lunches or dinners.

Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 cup crushed tomatoes (optional)
  • 1 bay leaf
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • Salt and pepper, to taste
  • 1 tbsp lemon juice (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery. Cook for 5–7 minutes until softened.
  3. Add garlic and cook for 1–2 minutes until fragrant.
  4. Stir in chickpeas, bay leaf, thyme, salt, pepper, and crushed tomatoes if using.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer uncovered for 20–25 minutes.
  7. Optional: Partially blend the soup with an immersion blender or mash some chickpeas for a creamier texture.
  8. Stir in lemon juice and adjust seasoning to taste.
  9. Remove bay leaf, garnish with parsley if desired, and serve warm.

Notes
