Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed (or 3 cups cooked chickpeas)
  • 1 cucumber, diced
  • 1 bell pepper (red, yellow, or orange), diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice (or more to taste)
  • 1 tbsp red wine vinegar (or apple cider vinegar)
  • 1 tsp dried oregano (or fresh oregano, finely chopped)
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: In a large mixing bowl, combine the chickpeas, diced cucumber, bell pepper, red onion, cherry tomatoes, and chopped parsley.
  2. Make the dressing: In a small bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper. Taste and adjust the seasoning if needed, adding more salt, pepper, or lemon juice to suit your preferences.
  3. Combine the salad: Pour the dressing over the chickpea and vegetable mixture, and toss everything together until well coated.
  4. Chill (optional): For best results, let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together. However, it’s still delicious right after mixing.
