Chicken Taquitos are crispy rolled tortillas filled with seasoned shredded chicken and cheese, then baked or fried to perfection. They’re a versatile and satisfying snack, appetizer, or main dish for any occasion.

Ingredients

  • 2 cups shredded cooked chicken (rotisserie or leftover)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup salsa or diced green chiles
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 12 small flour or corn tortillas
  • Cooking spray or oil (for baking or frying)

Instructions

  1. Preheat oven to 425°F (220°C), or heat oil in a skillet for frying.
  2. In a large bowl, combine shredded chicken, cream cheese, shredded cheese, salsa or green chiles, and all spices. Mix well.
  3. Warm tortillas slightly to make them pliable.
  4. Spoon about 2 tablespoons of filling onto the lower third of each tortilla and roll tightly.
  5. Place rolled taquitos seam-side down on a baking sheet lined with parchment paper. Spray or brush with oil for crispiness.
  6. Bake for 15–20 minutes until golden and crisp, or fry for 2–3 minutes per side until golden brown.
  7. Serve hot with salsa, sour cream, guacamole, or your favorite dipping sauce.

Notes

Use corn tortillas for a gluten-free version (check label to confirm).To prevent unrolling, place seam-side down and keep tortillas warm and flexible.Freeze uncooked taquitos in a single layer, then transfer to a bag for longer storage.Reheat in oven or air fryer to maintain crispiness—avoid microwaving.Add chopped veggies like bell peppers or spinach to the filling for extra nutrition.
