These Chicken Skewers are juicy, flavorful, and marinated with garlic, lemon, and warm spices before being grilled to perfection. Perfect for barbecues, quick dinners, or meal prep, these easy grilled chicken skewers pair well with vegetables, rice, salads, or your favorite dipping sauces.

Ingredients

  • 1 ½ lbs boneless chicken breasts or chicken thighs, cut into cubes

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 2 tablespoons lemon juice

  • 1 teaspoon paprika

  • ½ teaspoon ground cumin

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 bell pepper, cut into chunks (optional)

  • ½ red onion, cut into pieces (optional)

Instructions

  • In a bowl, whisk together the olive oil, minced garlic, lemon juice, paprika, cumin, oregano, salt, and black pepper.

  • Add the cubed chicken to the marinade and toss until evenly coated.

  • Cover and refrigerate for at least 30 minutes to allow the flavors to develop.

  • If using wooden skewers, soak them in water for 20 minutes to prevent burning.

  • Thread the marinated chicken onto skewers, alternating with bell peppers and onion pieces if desired.

  • Preheat a grill or grill pan to medium-high heat.

  • Place the skewers on the grill and cook for 10–12 minutes, turning occasionally.

  • Continue grilling until the chicken is fully cooked and lightly charred, reaching an internal temperature of 165°F (74°C).

  • Remove the skewers from the grill and allow them to rest for a few minutes before serving.

Notes

Chicken thighs tend to stay juicier than chicken breasts when grilled.Marinating for 1–2 hours will enhance the flavor even more.These skewers can also be cooked in the oven at 400°F (200°C) for 18–20 minutes.Serve with tzatziki, garlic sauce, or barbecue sauce for extra flavor.
