Ingredients

  • pounds chicken breast or thighs, sliced
  • 3 tablespoons yellow curry paste
  • 1 can (13.5 ounces) coconut milk
  • ¼ cup peanut butter
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 potatoes, diced
  • 2 carrots, sliced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Crushed peanuts, for garnish
  • Fresh cilantro, for garnish
  • Salt, to taste
  • Black pepper, to taste

Instructions

  • Heat olive oil in a large skillet or pot over medium heat.
  • Add the sliced onion and cook until softened, about 4–5 minutes.
  • Stir in the garlic and ginger and cook until fragrant.
  • Add the yellow curry paste, turmeric, cumin, and coriander. Cook for 1 minute to release the flavors.
  • Add the chicken pieces and cook until lightly browned on the outside.
  • Stir in the diced potatoes and sliced carrots.
  • Pour in the coconut milk and chicken broth, stirring well.
  • Add the peanut butter, soy sauce, brown sugar, and lime juice.
  • Bring the curry to a gentle simmer and cook for 20–25 minutes until the chicken is fully cooked and the vegetables are tender.
  • Season with salt and black pepper to taste.
  • Garnish with crushed peanuts and fresh cilantro before serving.
  • Serve hot with steamed jasmine rice or noodles.
