Ingredients

  • 4 boneless skinless chicken breasts
      • Salt, to taste

      • Black pepper, to taste

      • 2 tablespoons olive oil (divided)

      • 2 cloves garlic, minced

      • 2 cups fresh spinach

      • 4 oz cream cheese, softened

      • 1/2 cup shredded mozzarella or grated Parmesan

      • 1–2 tablespoons fresh parsley or thyme, chopped

      • 1/2 teaspoon paprika

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Place each chicken breast between plastic wrap and pound to about 1/4 inch thickness.

  3. Season both sides with salt, pepper, and paprika.

  4. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté garlic until fragrant. Add spinach and cook until wilted. Cool slightly.

  5. In a bowl, combine cream cheese, cooked spinach, shredded cheese, and herbs.

  6. Spread filling evenly over each chicken breast, leaving a small border.

  7. Roll tightly and secure with kitchen twine or toothpicks.

  8. Heat remaining olive oil in an oven-safe skillet over medium-high heat. Sear roulades on all sides until golden brown.

  9. Transfer skillet to oven and bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).

  10. Rest for 5–10 minutes, remove twine, slice into rounds, and serve warm.
