2 large chicken breasts, sliced into thin cutlets
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons olive oil
3 tablespoons unsalted butter
2 cloves garlic, minced
1/2 cup chicken broth
1/3 cup fresh lemon juice
2 tablespoons capers, drained
2 tablespoons fresh parsley, chopped
Slice the chicken breasts horizontally to create thin cutlets.
In a shallow dish, combine flour, salt, and black pepper.
Lightly dredge the chicken cutlets in the flour mixture, shaking off excess flour.
