Chicken Madeira is a comforting and elegant dish featuring tender chicken breasts smothered in a creamy mushroom and Madeira wine sauce, topped with mozzarella cheese and served with buttery asparagus.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 cup Madeira wine
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 4 slices mozzarella cheese
  • 1 bunch fresh asparagus, trimmed
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Pound the chicken breasts to an even thickness for even cooking.
  2. Season both sides of the chicken with salt and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden and cooked through, about 4-5 minutes per side. Remove and set aside.
  4. In the same skillet, add butter and sauté the sliced mushrooms until browned and tender, about 5-6 minutes.
  5. Add minced garlic and cook for another minute until fragrant.
  6. Pour in the Madeira wine and beef broth. Bring to a simmer and reduce by half, about 10 minutes.
  7. Stir in the heavy cream and simmer until slightly thickened, about 3-5 minutes.
  8. Return the chicken to the skillet and top each piece with a slice of mozzarella cheese. Cover and cook until the cheese melts.
  9. Meanwhile, blanch the asparagus in boiling water for 2-3 minutes. Drain well.
  10. Serve the chicken over or alongside the asparagus, spooning mushroom sauce over the top.
  11. Garnish with fresh parsley if desired and serve warm.

Notes

Use provolone or Swiss cheese as an alternative to mozzarella.Dry sherry or Marsala wine can be used in place of Madeira wine.Add caramelized onions to the sauce for extra depth.Serve over mashed potatoes, rice, or pasta for variation.To make it vegetarian, substitute chicken with portobello mushrooms.Store leftovers in an airtight container for up to 3 days.Add broth when reheating to refresh the sauce texture.
