1/2 teaspoon salt
1/2 teaspoon black pepper

1/2 cucumber, grated and drained
1 tablespoon lemon juice
1 tablespoon olive oil
1 clove garlic, minced
1 tablespoon fresh dill, chopped
1/4 teaspoon salt

1 cup shredded lettuce
1 tomato, sliced
In a bowl, combine olive oil, garlic, lemon juice, oregano, paprika, cumin, salt, and black pepper.
Add the chicken thighs and coat well with the marinade.
Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Heat a skillet or grill pan over medium-high heat.
Cook the chicken for 5–7 minutes per side until fully cooked and nicely browned.
Remove the chicken from the pan and allow it to rest for a few minutes.
Slice the cooked chicken into thin strips.
Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, and salt in a bowl.
Warm the pita breads slightly in a pan or oven.
Assemble the gyros by placing sliced chicken onto the pita bread.
Top with lettuce, tomato, red onion, and a generous spoonful of tzatziki sauce.
Chicken thighs are recommended because they stay juicy and flavorful during cooking.
Drain the grated cucumber well to prevent watery tzatziki sauce.
