2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups cooked chicken, shredded
1 cup carrots, diced
1 cup celery, diced
4 cups chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1 package (16 oz) potato gnocchi
1 cup fresh spinach, chopped
Heat olive oil in a large pot over medium heat.
Add the diced onion and cook until softened.
Stir in the minced garlic and cook for about 30 seconds until fragrant.
Add carrots and celery and cook for about 5 minutes until slightly tender.
Pour in the chicken broth and bring the mixture to a gentle simmer.
Stir in shredded chicken, dried thyme, salt, and black pepper.
Add the gnocchi and cook according to package instructions, usually 3–4 minutes.
