Ingredients

  • Chicken broth
  • Heavy cream

Instructions

  • Season the chicken with salt and black pepper.
  • Heat butter and olive oil in a large skillet or pot. Brown the chicken lightly on both sides, then remove and set aside.
  • In the same pan, sauté onions, garlic, carrots, and mushrooms until softened.
  • Sprinkle flour over the vegetables and stir to form a light roux.
  • Gradually add chicken broth, stirring constantly to create a smooth sauce.
  • Return the chicken to the pan. Add bay leaf and thyme.
