Chicken Florentine is a rich and flavorful dish featuring tender chicken breasts smothered in a creamy spinach sauce. For the chicken:
4 boneless, skinless chicken breasts
For the sauce:
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
6 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
1 teaspoon dried oregano
½ teaspoon ground nutmeg

For garnish:
Cook the chicken:
Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides. Combine chicken and sauce:
Return the cooked chicken breasts to the skillet, spooning the creamy spinach sauce over them. Let simmer for another 2-3 minutes to ensure everything is heated through and the chicken is fully coated with the sauce.
