Chicken Florentine is a rich and flavorful dish featuring tender chicken breasts smothered in a creamy spinach sauce. Ingredients

For the chicken:

  • 4 boneless, skinless chicken breasts

For the sauce:

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • 4 cloves garlic, minced

  • 6 cups fresh spinach (or 1 package frozen spinach, thawed and drained)

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 teaspoon dried oregano

  • ½ teaspoon ground nutmeg

  • Salt and pepper to taste

For garnish:

  • Fresh parsley (optional)

Instructions

  • Cook the chicken:
    Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides. Add the chicken to the skillet and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove from the skillet and set aside.

  • Make the spinach sauce:
    In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. If using frozen spinach, sauté for an additional minute to heat it through.

  • Prepare the creamy sauce:
    Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-4 minutes to slightly thicken. Stir in grated Parmesan, oregano, nutmeg, salt, and pepper. Taste and adjust seasonings.

  • Combine chicken and sauce:
    Return the cooked chicken breasts to the skillet, spooning the creamy spinach sauce over them. Let simmer for another 2-3 minutes to ensure everything is heated through and the chicken is fully coated with the sauce.

  • Serve:
    Once the chicken is covered in the creamy spinach sauce, remove from heat. Garnish with fresh parsley if desired and serve hot. This dish pairs well with pasta, rice, or roasted vegetables.
