Chicken & Dumplings with Biscuits is a comforting, hearty dish that combines creamy chicken soup with soft, flaky biscuit dumplings. This easy twist on the classic chicken and dumplings replaces traditional dumplings with biscuit dough, making it quicker and even more comforting.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 celery stalks, sliced
  • 2 medium carrots, peeled and sliced
  • 3 cups chicken broth
  • 2 cups milk
  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 1 tablespoon cornstarch (optional, for thickening)
  • For the biscuit dumplings:
  • 1 can (16.3 oz) refrigerated biscuit dough (such as Pillsbury Grands)
  • 1 teaspoon dried parsley (optional)
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5-7 minutes, or until the vegetables are softened.
  2. Add the chicken broth and milk to the pot, bringing it to a simmer. Let it cook for about 10 minutes, allowing the flavors to combine.
  3. Stir in the shredded chicken, thyme, parsley, salt, and pepper. If you prefer a thicker soup, dissolve the cornstarch in a little cold water and add it to the pot, stirring well. Let the soup simmer for another 5 minutes.
  4. While the soup is simmering, prepare the biscuit dumplings: Open the biscuit dough and separate it into individual biscuits. Cut each biscuit into quarters to create smaller pieces that will cook into dumplings.
  5. Drop the biscuit pieces on top of the simmering soup. Cover the pot with a lid and cook for 10-12 minutes, or until the biscuits are puffed up and cooked through. Do not lift the lid during cooking.
  6. Once the biscuit dumplings are cooked, taste the soup and adjust the seasoning as necessary. Serve immediately, ensuring each bowl gets a generous portion of soup and biscuit dumplings.
