Chicken Caprese Skillet is a one-pan, Italian-inspired meal that combines juicy chicken breasts with fresh tomatoes, mozzarella, basil, and a balsamic drizzle. Simple yet elegant, it’s ready in 30 minutes and packed with vibrant flavor.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 8 ounces fresh mozzarella, sliced
  • 2 cups cherry tomatoes or 3 Roma tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar or balsamic glaze
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Season chicken breasts on both sides with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. Add a bit more oil if needed, then sauté the sliced tomatoes for 2–3 minutes until slightly softened.
  5. Return chicken to skillet and top each piece with mozzarella slices.
  6. Cover and cook for another 2–3 minutes until the cheese is melted.
  7. Drizzle with balsamic vinegar or glaze and sprinkle with fresh basil just before serving.
