4 bone-in chicken thighs or breasts
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 small onion, chopped
3 cloves garlic, minced
1 red bell pepper, sliced
1 cup mushrooms, sliced
1 can (14 oz) crushed tomatoes
1/2 cup chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
Season the chicken with salt and black pepper on both sides.
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add the chicken and cook for 5–6 minutes per side until browned. Remove the chicken and set aside.
In the same pan, add the chopped onion and cook until softened.
Add minced garlic and cook for about 30 seconds until fragrant.
Stir in the sliced bell pepper and mushrooms and cook for 3–4 minutes.
Pour in the crushed tomatoes and chicken broth.
Add oregano, basil, and red pepper flakes if using.
Stir the sauce and bring it to a gentle simmer.
Return the chicken to the pan and spoon some sauce over the top.
Cover and simmer for 25–30 minutes until the chicken is tender and fully cooked.
Bone-in chicken provides extra flavor, but boneless chicken can also be used.Allow the sauce to simmer slowly to develop deeper flavor.For richer taste, add 1/2 cup red or white wine when adding the tomatoes.The sauce thickens naturally as it cooks, but simmer uncovered if a thicker sauce is desired.
