Chicken Bruschetta Pasta is a light and flavorful dish that combines the classic Italian bruschetta topping—juicy tomatoes, garlic, basil, and balsamic—with tender chicken and al dente pasta. It’s a quick, fresh, and satisfying meal perfect for weeknights or casual gatherings.

Ingredients

  • 2 boneless, skinless chicken breasts, thinly sliced or pounded thin
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil, divided
  • 3 garlic cloves, minced
  • 1/4 cup red onion, finely chopped (optional)
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons balsamic vinegar or glaze, plus more for drizzling
  • 1/4 cup fresh basil, chopped
  • 8 oz pasta (spaghetti, penne, or your choice)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 cup mozzarella pearls or shredded mozzarella (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat 1 tablespoon olive oil over medium heat. Cook chicken for 4–5 minutes per side until golden and cooked through. Remove and let rest before slicing.
  4. In the same skillet, heat remaining olive oil. Add garlic and red onion (if using) and sauté for 1–2 minutes until fragrant.
  5. Add cherry tomatoes and cook for 3–4 minutes until they begin to soften.
  6. Stir in balsamic vinegar and simmer for 1–2 minutes.
  7. Add cooked pasta, reserved pasta water, and sliced chicken to the skillet. Toss to coat evenly.
  8. Stir in fresh basil and adjust seasoning as needed.
  9. Top with mozzarella and Parmesan, if using. Drizzle with extra balsamic glaze before serving.
