Pozharsky Kotleti (Chicken and Beef Croquettes) are a traditional Russian dish with a crispy golden exterior and tender, flavorful interior. Made with a mix of chicken and beef, these croquettes are perfect as a main dish or appetizer, easy to prepare, and highly customizable.

Ingredients

  • 1/2 pound ground chicken
  • 1/2 pound ground beef
  • 1 small onion, finely chopped
  • 2 slices white bread (preferably day-old), soaked in milk
  • 1/2 cup milk (for soaking the bread)
  • 1 egg
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/2 cup flour (for breading)
  • 1/2 cup breadcrumbs (for breading)
  • Vegetable oil, for frying

Instructions

  1. In a small bowl, soak the white bread slices in milk for about 5 minutes. Tear the bread into small pieces and set aside.
  2. In a large mixing bowl, combine the ground chicken, ground beef, chopped onion, soaked bread pieces, egg, black pepper, salt, garlic powder (if using), and fresh parsley. Mix well until smooth.
  3. Shape the mixture into oval or round croquettes, ensuring even size for uniform cooking.
  4. In a shallow dish, combine flour and breadcrumbs. Roll each croquette in the flour mixture, pressing gently to coat evenly.
  5. Heat vegetable oil in a large skillet over medium heat. Fry the croquettes in batches, cooking 4-5 minutes per side, until golden brown and cooked through.
  6. Place fried croquettes on a paper towel-lined plate to drain excess oil. Serve immediately with side dishes like mashed potatoes, salad, or steamed vegetables.

Notes

For a spicier version, add chili flakes or finely chopped jalapeños to the meat mixture.To make gluten-free, use gluten-free bread and breadcrumbs.For added moisture and flavor, finely diced vegetables like mushrooms or carrots can be incorporated into the meat mixture.If you prefer, these croquettes can be baked at 375°F (190°C) for 20-25 minutes, flipping halfway through.Leftover croquettes can be stored in the fridge for up to 3 days, or frozen for up to 2 months before frying.
