Cherry Tomatoes Roasted in Oil and Herbs is a simple yet flavorful dish where sweet cherry tomatoes are roasted with olive oil, garlic, and fresh herbs, creating a caramelized, tender texture. This versatile dish can be served as a side, salad topping, or on toasted bread.

Ingredients

  • 2 pints cherry tomatoes (about 3 cups)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • 1 tablespoon balsamic vinegar (optional, for drizzling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the cherry tomatoes and pat them dry with a paper towel. Cut them in half if desired, or leave them whole for more caramelization.
  3. Place the tomatoes in a bowl and drizzle with olive oil. Toss to coat evenly. Sprinkle with garlic powder, dried oregano, dried basil, salt, and pepper. Toss again to ensure even seasoning.
  4. Spread the seasoned tomatoes in a single layer on a baking sheet. Roast for 15-20 minutes, or until the tomatoes are tender, softened, and slightly caramelized. Stir halfway through for even roasting.
  5. Once roasted, remove the tomatoes from the oven and let them cool slightly. Drizzle with balsamic vinegar and garnish with fresh parsley if desired. Serve immediately.

Notes

For extra sweetness, drizzle balsamic glaze over the tomatoes after roasting.Feel free to use fresh herbs such as thyme, rosemary, or tarragon in place of oregano and basil.If you want the tomatoes to be more caramelized, roast them for an additional 5 minutes or increase the oven temperature to 425°F (220°C).Add crumbled feta or goat cheese on top just before serving for a creamy contrast.
