2 medium zucchini, grated
½ teaspoon salt
1 large egg
1 ½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ teaspoon garlic powder
½ teaspoon dried oregano
¼ teaspoon black pepper
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Place grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step prevents soggy breadsticks.
Transfer drained zucchini to a mixing bowl.
