Ingredients

  • lb ground turkey
  • 2 cups cooked rice
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet (or 2 tbsp) taco seasoning
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup tomato sauce
  • ½ cup corn (optional)
  • ½ cup black beans (optional, drained and rinsed)
  • 1 cups shredded cheddar or Mexican blend cheese
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and cook until softened.
  • Stir in garlic and cook until fragrant.
  • Add ground turkey and cook until browned, breaking it apart as it cooks.
  • Sprinkle taco seasoning over the turkey and mix well.
  • Stir in diced tomatoes and tomato sauce; simmer for 3–5 minutes.
  • Add cooked rice, corn, and black beans (if using); stir to combine.
  • Reduce heat to low and sprinkle cheese evenly over the top.
  • Cover and cook until cheese is melted and bubbly.
  • Garnish with fresh cilantro and serve.
