2 medium potatoes, peeled and diced
1 tablespoon olive oil (or butter)
Salt and pepper, to taste
1/2 cup shredded cheddar cheese (or any cheese of your choice)
4 large eggs
2 tablespoons milk or cream (optional, for fluffier eggs)
1 tablespoon chopped fresh parsley (optional, for garnish)
Cook the potatoes:
Heat olive oil or butter in a large skillet over medium heat. Add the diced potatoes, season with salt, pepper, and paprika (if using). Cook, stirring occasionally, for 8-10 minutes or until golden brown and crispy on the outside and tender inside. If the potatoes cook too quickly, reduce the heat.
Prepare the eggs:
Crack the eggs into a bowl and whisk together with milk or cream (if using). Season with a pinch of salt and pepper. Set aside.
Scramble the eggs:
Once the potatoes are cooked, push them to one side of the skillet. Pour the whisked eggs into the other side. Let the eggs cook undisturbed for 1-2 minutes, then gently scramble, folding them in with the potatoes. Cook for another 2-3 minutes until eggs are soft and fluffy.
Add the cheese:
Sprinkle the shredded cheese over the eggs and potatoes. Stir gently to allow the cheese to melt and mix through the scramble.
Serve:
Remove from heat, garnish with chopped parsley (if using), and serve immediately. Enjoy your Cheesy Potato Egg Scramble!
