Cheesy Hot Corn Dip is a creamy, cheesy appetizer that combines sweet corn, cream cheese, cheddar cheese, and a variety of spices. Served warm, this dip is perfect for parties, BBQs, or casual gatherings, making it an irresistible treat for everyone.

Ingredients

  • For the dip:
  • 2 cups frozen corn kernels (or 2 cans of corn, drained)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon chili powder (optional, for a little heat)
  • 1/4 teaspoon smoked paprika (optional, for extra flavor)
  • Salt and pepper, to taste
  • 1 tablespoon fresh cilantro or parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic powder, onion powder, chili powder, and smoked paprika (if using). Mix until smooth and fully combined.
  3. Stir in the corn kernels, shredded cheddar cheese, and a pinch of salt and pepper. Mix until everything is evenly combined.
  4. Transfer the mixture to the prepared baking dish and spread it evenly.
  5. Bake for 20-25 minutes, or until the dip is bubbly and golden on top.
  6. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro or parsley, if desired.
  7. Serve with tortilla chips, crackers, sliced baguette, or fresh vegetable sticks for dipping!

Notes

If you prefer a spicier dip, add diced jalapeños, extra chili powder, or hot sauce.For added flavor, you can mix in some crispy,  or diced bell peppers.This dip can be made ahead of time, just assemble it and refrigerate until you’re ready to bake it.Leftover dip can be stored in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes or microwave it until warmed through.
