Cheesy Ground Beef Zucchini Skillet is a quick, one-pan dinner made with seasoned beef, tender zucchini, and melty cheese. This wholesome and low-carb recipe is perfect for busy weeknights and comes together in under 30 minutes.

Ingredients

  • 1 lb ground beef
  • 2 medium zucchini, sliced or chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 2 tbsp tomato paste or 1 cup diced tomatoes
  • 1 tsp Italian seasoning or taco seasoning
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • Fresh parsley or basil, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  4. Stir in tomato paste (or diced tomatoes), seasoning, salt, and pepper.
  5. Add chopped zucchini and cook for 5–8 minutes, until tender but not mushy.
  6. Sprinkle cheese evenly on top. Cover skillet and cook for 2–3 minutes until melted.
  7. Garnish with fresh parsley or basil and serve hot.

Notes

Use ground turkey or chicken as a lighter alternative.Avoid mushy zucchini by cooking until just tender and not overcrowding the skillet.For Mexican-style, use taco seasoning and pepper jack cheese.Add rice, quinoa, or extra veggies for a heartier dish.Not freezer-friendly due to zucchini’s high water content.
