Ingredients

  • 2 medium carrots, peeled and chopped
  • 1 tablespoon fresh ginger, chopped
  • 2 tablespoons white or yellow miso paste
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons neutral oil (like avocado or vegetable oil)
  • 1 tablespoon maple syrup
  • 1 tablespoon soy sauce or tamari
  • 24 tablespoons water (as needed)
  • Optional: 1 clove garlic, 1 tablespoon lime juice

Instructions

  • Add carrots, ginger, miso paste, rice vinegar, sesame oil, and soy sauce to a blender.
  • Add maple syrup and 2 tablespoons of water.
  • Blend until smooth, adding more water gradually to reach desired consistency.
  • Taste and adjust seasoning (more vinegar for tang, maple for sweetness, or miso for saltiness).
  • Chill for 10–15 minutes before serving for best flavor.
