Ingredients

  • 2 sheets puff pastry, thawed if frozen
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons olive oil or butter
  • 1 teaspoon fresh thyme leaves (optional)
  • 4 ounces goat cheese, soft and creamy
  • Salt, to taste
  • Black pepper, to taste
  • Balsamic glaze, for drizzling (optional)
  • 1 egg, beaten (for egg wash, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, add olive oil or butter and sliced onions. Cook slowly, stirring often, until onions are deeply golden and caramelized, about 30–40 minutes. Season with salt, pepper, and thyme toward the end.
  3. While the onions cook, roll out the puff pastry and cut into 6–8 squares or 4 medium circles. Place on a parchment-lined baking sheet.
  4. Score a smaller border about ½ inch from the edge of each pastry and prick the center with a fork.
  5. Spoon caramelized onions onto each pastry within the scored border.
  6. Crumble goat cheese evenly over the onions.
  7. Optional: Brush pastry edges with beaten egg for a golden finish.
  8. Bake for 20–25 minutes, until pastry is puffed and golden brown.
  9. Let cool slightly, then drizzle with balsamic glaze if desired. Serve warm or at room temperature.
