These Caprese Stuffed Chicken Breast Sandwiches are a delicious Italian-inspired meal featuring juicy chicken stuffed with fresh mozzarella, tomatoes, and basil. Served on toasted ciabatta and finished with balsamic glaze, this easy chicken sandwich recipe is perfect for a flavorful lunch or dinner.

Ingredients

  • 4 chicken breasts
  • 8 oz fresh mozzarella, sliced
  • 2 tomatoes, sliced
  • Fresh basil leaves
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp Italian seasoning
  • Balsamic glaze, for drizzling
  • 4 sandwich rolls or ciabatta

Instructions

  • Slice a pocket into each chicken breast carefully without cutting all the way through.
  • Stuff each chicken breast with mozzarella, tomato slices, and fresh basil leaves. Secure with toothpicks if needed.
  • Season the outside of the chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a skillet over medium heat. Sear the chicken for 4–5 minutes per side until golden brown.
  • Reduce heat, cover, and cook for 10–15 minutes until the chicken is fully cooked and cheese is melted.
  • Meanwhile, toast the sandwich rolls or ciabatta. Optionally rub with minced garlic for extra flavor.
  • Remove chicken from the skillet and let rest for a few minutes, then slice if desired.
  • Place the stuffed chicken onto toasted bread.
  • Drizzle with balsamic glaze and add extra basil or tomatoes if desired.
  • Serve warm.
