Ingredients

  • 1 medium cantaloupe, cut into bite-sized cubes or balled
  • 1 cucumber, thinly sliced or cut into half-moons
  • 1/4 cup fresh mint leaves, finely chopped
  • 2 tablespoons lime juice
  • 1 teaspoon honey (optional)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Cut the cantaloupe into bite-sized cubes or use a melon baller for presentation.
  2. Peel the cucumber if desired and slice thinly or into half-moons.
  3. Finely chop the fresh mint leaves.
  4. In a large mixing bowl, combine cantaloupe, cucumber, and mint.
  5. Drizzle with lime juice and honey if using.
  6. Season lightly with salt and freshly ground black pepper.
