Cake mix cookies are soft, chewy, and incredibly easy to make with just three ingredients. Perfect for quick desserts, last-minute baking, or fun projects with kids, they offer endless flavor combinations using your favorite boxed cake mix.

Ingredients

  • 1 box (15.25 oz) cake mix (any flavor)
  • 2 large eggs
  • 1/2 cup vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cake mix, eggs, and vegetable oil. Stir until a thick dough forms.
  3. Scoop out tablespoon-sized portions and roll into balls. Place them 2 inches apart on the prepared baking sheet.
  4. Flatten slightly with your fingers or the back of a spoon, if desired.
  5. Bake for 9–12 minutes, until edges are set and centers are slightly soft.
  6. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use any flavor of cake mix—chocolate, vanilla, lemon, red velvet, etc.Add mix-ins like chocolate chips, nuts, or sprinkles for variety.No chilling required, but you can chill dough for easier handling if sticky.Melted butter can be used in place of oil for a richer flavor.Cookies firm up as they cool—don’t overbake.
