Cadbury Egg Blondies are rich, buttery dessert bars studded with crushed mini Cadbury Eggs. Soft, chewy, and full of melty chocolate with a crunchy candy shell, they’re perfect for spring and Easter celebrations.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup mini Cadbury Eggs, crushed or halved
  • 1/3 cup white chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch or 9×9-inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla extract; whisk until fully combined.
  4. Stir in flour, baking powder, and salt until just combined—do not overmix.
  5. Fold in crushed mini Cadbury Eggs and white chocolate chips if using.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Press a few extra Cadbury Egg pieces on top for decoration.
  8. Bake for 25–30 minutes or until edges are golden and a toothpick comes out with a few moist crumbs.
  9. Allow to cool completely in the pan before slicing into squares.
