  • 1 bay leaf (optional)

  • 1 tablespoon lemon juice (optional, for added brightness)

Instructions

  • Sauté the Vegetables:

    • In a large pot, heat olive oil over medium heat. Add the chopped onion and cook for 4-5 minutes, until softened.

    • Add the minced garlic and cook for another minute, stirring frequently.

  • Cook the Soup:

    • Add the chopped cabbage, carrots, and celery to the pot. Stir to combine.

    • Pour in the diced tomatoes (with juice) and vegetable broth. Stir in the thyme, basil, salt, and pepper. Add the bay leaf if using.

  • Simmer:

    • Bring the soup to a boil, then reduce the heat to low. Let the soup simmer for 30-40 minutes, or until the vegetables are tender.

  • Final Touches:

    • Taste and adjust the seasoning, adding more salt, pepper, or herbs as needed. For extra brightness, stir in a tablespoon of lemon juice.

  • Serve:

    • Remove the bay leaf before serving. Serve the soup hot, and enjoy!
