Butter tarts are a beloved Canadian dessert featuring a flaky pastry shell filled with a rich, gooey, caramel-like filling. They’re simple to make and customizable with raisins, nuts, or chocolate.

Ingredients

  • 12 prepared tart shells or homemade pastry dough
  • 1/4 cup unsalted butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup corn syrup or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional add-ins:
  • 1/2 cup raisins
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 375°F (190°C). Place tart shells into a muffin tin if needed.
  2. Melt the butter in a saucepan or microwave-safe bowl and let it cool slightly.
  3. In a large bowl, whisk together brown sugar, eggs, corn syrup or maple syrup, vanilla extract, and salt.
  4. Stir in the melted butter until fully combined and smooth.
  5. If using raisins or nuts, distribute them evenly into the bottom of each tart shell.
  6. Pour filling into tart shells, filling each about ¾ full.
  7. Bake for 18–22 minutes, or until the edges are set and the centers are slightly jiggly.
  8. Remove from oven and let cool in the pan for at least 10 minutes before serving.

Notes

  • Adjust baking time for a runnier or firmer center based on preference.Maple syrup offers a richer, more traditional flavor than corn syrup.Let tarts cool completely before removing to prevent breaking.Freeze for longer storage; thaw at room temperature before serving.Use chocolate chips for a fun variation.
