Ingredients

  • 250g pasta of choice (spaghetti, penne, or linguine)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated parmesan cheese or dairy-free alternative

Instructions

  • Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté briefly until fragrant.
  • Add cherry tomatoes and cook, stirring occasionally, until they burst and release their juices.
  • Season with salt, pepper, and red pepper flakes.
  • Gently press some tomatoes with a spoon to help create a sauce.
  • Add cooked pasta to the skillet and toss to coat evenly.
  • Pour in a bit of reserved pasta water as needed to loosen the sauce.
  • Stir in fresh basil and adjust seasoning.
  • Serve hot, topped with parmesan or dairy-free alternative.
