Bruschetta is a classic Italian appetizer that combines fresh tomatoes, garlic, basil, and olive oil on crispy toasted bread for a light, flavorful, and refreshing bite.

Ingredients

  • 1 loaf of Italian baguette or crusty bread, sliced into 1-inch pieces
  • 4 medium tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil (plus extra for brushing bread)
  • 1 tablespoon balsamic vinegar (optional)
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Prepare the tomatoes: In a bowl, combine the diced tomatoes, chopped basil, olive oil, balsamic vinegar (if using), minced garlic, salt, and pepper. Stir well and set aside to let the flavors meld together.
  2. Toast the bread: Preheat your oven to 400°F (200°C). Arrange the bread slices on a baking sheet and lightly brush both sides with olive oil. Toast in the oven for 5-7 minutes or until the bread is golden and crispy.
  3. Assemble the bruschetta: Once the bread is toasted, remove it from the oven. Spoon the tomato mixture generously onto each slice of bread.
  4. Serve: Arrange the bruschetta on a platter and serve immediately. Optionally, garnish with extra basil or a drizzle of olive oil before serving.

Notes

Add cheese: Top the bruschetta with fresh mozzarella or Parmesan for added richness.Roasted garlic: Roast a whole bulb of garlic and mash it into the tomato mixture for a sweeter, milder garlic flavor.Avocado twist: Add diced avocado to the tomato mixture for a creamy texture and extra richness.Vegan version: Skip the cheese and use extra olive oil for a simple, fresh vegan option.Grilled version: For an extra smoky flavor, grill the bread slices instead of toasting them in the oven.Storage: Bruschetta is best served fresh. The tomato mixture can be stored in an airtight container in the fridge for up to 1 day, but the bread will lose its crunch if stored too long.Reheating: If you have leftover toasted bread, you can reheat it in the oven for a couple of minutes, but it’s best enjoyed immediately after assembling.
