Brunswick stew is a thick, hearty Southern-style stew made with shredded chicken, vegetables, and a tangy tomato-based broth. This comforting dish is rich in flavor, easy to prepare, and perfect for chilly nights or large gatherings.

Ingredients

  • 2 tablespoons olive oil or butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1/2 cup barbecue sauce
  • 3 cups chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce (optional)
  • Salt and black pepper, to taste
  • 2 medium potatoes, diced
  • 1 1/2 cups corn (fresh, frozen, or canned)
  • 1 1/2 cups lima beans or butter beans
  • 3 cups cooked, shredded chicken

Instructions

  1. Heat olive oil or butter in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and sauté for 5 minutes, until softened. Add garlic and cook for 1–2 more minutes.
  3. Stir in diced tomatoes, tomato sauce, barbecue sauce, chicken broth, brown sugar, Worcestershire sauce, hot sauce (if using), salt, and pepper. Bring to a simmer.
  4. Add diced potatoes and simmer for about 15 minutes, or until they start to soften.
  5. Stir in corn, lima beans, and shredded chicken. Reduce heat and simmer uncovered for 30–45 minutes, stirring occasionally, until thickened and flavorful.
  6. Taste and adjust seasoning as needed.
  7. Serve hot with cornbread, biscuits, or crackers.

Notes
