Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 large fresh peaches, sliced
  • 6 tablespoons butter
  • ⅓ cup brown sugar
  • ¼ cup maple syrup or honey
  • 2 large eggs
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chopped pecans or walnuts
  • ¼ teaspoon ground nutmeg

Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  • In a small saucepan over medium heat, melt the butter. Continue cooking for 3–5 minutes, stirring frequently, until the butter becomes golden brown and smells nutty. Remove from heat immediately.
  • In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, salt, and chopped pecans or walnuts.
  • In a separate bowl, whisk together the browned butter, brown sugar, maple syrup, eggs, milk, and vanilla extract until smooth.
  • Pour the wet ingredients into the oat mixture and stir until fully combined.
  • Fold in most of the sliced peaches, reserving a few slices for the top.
  • Transfer the mixture to the prepared baking dish and spread evenly. Arrange the remaining peach slices on top.
  • Bake for 35–40 minutes, or until the center is set and the top is lightly golden brown.
  • Let cool slightly before serving warm.
