This broccoli quiche is a flavorful and easy-to-make dish with a creamy egg filling, tender broccoli, and melted cheese inside a flaky pie crust. It’s perfect for breakfast, brunch, lunch, or a light dinner.

Ingredients

  • 1 9-inch pie crust
  • 2 cups broccoli florets
  • 4 large eggs
  • 1 cup milk or cream
  • 1 cup shredded cheese (cheddar, Swiss, or Gruyère)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp ground nutmeg
  • 1 tbsp olive oil or butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pie crust in a pie dish and set aside.
  3. Lightly cook the broccoli in boiling water or sauté in olive oil or butter until just tender. Drain well.
  4. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  5. Spread the broccoli evenly over the pie crust and sprinkle the shredded cheese on top.
  6. Pour the egg mixture over the filling.
  7. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.
  8. Let the quiche rest for 10 minutes before slicing and serving.

Notes

Blind baking the crust for 10 minutes helps prevent a soggy bottom.Use dairy-free milk and cheese for a dairy-free version.To make it crustless, grease the pie dish and omit the crust.Frozen broccoli can be used—just thaw and drain it well first.Great as a make-ahead dish for easy meals throughout the week.
