This Broccoli Cheddar Crustless Quiche is a delicious, healthy, and versatile dish featuring a creamy egg mixture with cheddar cheese and sautéed broccoli. It’s perfect for breakfast, lunch, or dinner, without the carbs from a crust.

Ingredients

  • 2 cups broccoli florets, chopped
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk (or cream for a richer flavor)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 teaspoon dried thyme (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or quiche dish with cooking spray or butter.
  2. Sauté the broccoli: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Add the broccoli florets and cook for another 4-5 minutes, just until the broccoli is tender. Remove from heat and set aside to cool slightly.
  3. Make the egg mixture: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, thyme (if using), salt, and pepper until well combined.
  4. Assemble the quiche: Spread the sautéed broccoli and onion mixture evenly into the bottom of the prepared pie dish. Pour the egg mixture over the top and sprinkle the shredded cheddar cheese evenly over the quiche.
  5. Bake: Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and lightly golden on top. You can test doneness by inserting a knife into the center; it should come out clean when the quiche is fully cooked.
  6. Serve: Let the quiche cool for a few minutes before slicing and serving. Enjoy warm or at room temperature.
