Braised Cabbage with Chicken is a comforting one-pan meal made with tender chicken, slow-cooked cabbage, and flavorful vegetables simmered in a savory broth. This easy braised chicken and cabbage recipe is hearty, nutritious, and perfect for cozy family dinners or simple weeknight meals.

Ingredients

  • 4 chicken thighs or chicken drumsticks

  • 1 medium green cabbage, chopped

  • 1 medium onion, sliced

  • 2 carrots, sliced

  • 3 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 1½ cups chicken broth

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat.

  • Season the chicken with salt, black pepper, and paprika.

  • Place the chicken in the skillet and cook for 5–6 minutes per side until lightly browned. Remove and set aside.

  • In the same pan, add the sliced onion and carrots. Cook for 4–5 minutes until softened.

  • Add the minced garlic and cook for 30 seconds until fragrant.

  • Stir in the tomato paste and cook for 1 minute to deepen the flavor.

  • Add the chopped cabbage and toss with the vegetables.

  • Pour in the chicken broth and sprinkle in the dried thyme.

  • Return the browned chicken to the pan, placing it on top of the cabbage.

  • Cover and simmer on low heat for 30–35 minutes until the cabbage is tender and the chicken is fully cooked.

  • Garnish with freshly chopped parsley before serving.

Notes

Chicken thighs are recommended because they remain juicy during braising.If the dish becomes too dry during cooking, add a little extra chicken broth.Smoked paprika can be used for a deeper, smoky flavor.This dish pairs well with rice, mashed potatoes, or crusty bread.
