Blueberry Oatmeal Bake is a healthy, comforting, and easy-to-make breakfast or snack. Full of oats, fresh blueberries, and a hint of cinnamon, this baked oatmeal is naturally sweetened and perfect for meal prep.

Ingredients

  • 2 cups rolled oats
  • 1 1/2 cups unsweetened almond milk (or any milk of choice)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tbsp chia seeds (optional)
  • 1/4 cup chopped nuts (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, combine the rolled oats, almond milk, maple syrup, egg, vanilla extract, cinnamon, baking powder, and salt. Stir until well combined.
  3. Gently fold in the blueberries and chia seeds (if using).
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
  5. Sprinkle chopped nuts on top if desired.
  6. Bake for 35-40 minutes, or until the top is golden brown and a knife inserted comes out clean.
  7. Allow the oatmeal bake to cool slightly before slicing and serving. Enjoy it warm or at room temperature.

Notes

For extra sweetness, add a few more tablespoons of maple syrup or honey.If using frozen blueberries, do not thaw them before adding to the batter.You can make this oatmeal bake the night before and refrigerate it overnight. Just reheat it in the morning for a quick breakfast.Feel free to swap out the blueberries for other fruits, such as strawberries, raspberries, or peaches.
