Blueberry cobbler is a classic, comforting dessert featuring sweet, juicy blueberries baked beneath a golden, buttery biscuit topping. It’s rustic, easy to make, and perfect served warm with ice cream or whipped cream.

Ingredients

  • 4 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (or 2 tbsp flour)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup all-purpose flour (for topping)
  • 1/4 cup granulated sugar (for topping)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp unsalted butter, cold and cubed
  • 1/2 cup milk or buttermilk
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9-inch baking dish.
  2. In a bowl, combine blueberries, 1/2 cup sugar, lemon juice, cornstarch, vanilla extract, and a pinch of salt. Stir to coat berries, then pour into the prepared baking dish.
  3. In a separate bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
  5. Pour in milk and stir until just combined. Do not overmix.
  6. Drop spoonfuls of dough over the blueberry filling, leaving some gaps for bubbling.
  7. Sprinkle with coarse sugar if desired.
  8. Bake for 35–45 minutes, until topping is golden and filling is bubbling.
  9. Let cool for 10–15 minutes before serving. Serve warm with ice cream or whipped cream if desired.

Notes

Use frozen blueberries straight from the freezer; no need to thaw.Add lemon zest to the filling or topping for a brighter flavor.Mix rolled oats into the topping for extra texture.Adjust sugar levels to taste, especially if berries are very sweet or tart.Do not overmix the topping dough to keep it light and fluffy.
