Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp granulated sugar

For the Cheesecake Filling

  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the Blueberry Topping

  • 2 cups fresh or frozen blueberries
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

  • Fresh blueberries
  • Lemon zest
  • Powdered sugar

Instructions

  • Preheat oven to 325°F (163°C). Line a baking pan with parchment paper for easy removal.
  • In a bowl, combine graham cracker crumbs, melted butter, and sugar until evenly mixed.
  • Press the crust mixture firmly into the bottom of the prepared pan.
  • Bake the crust for 8–10 minutes until lightly golden, then allow it to cool slightly.
  • Beat cream cheese and sugar together until smooth and creamy.
  • Add eggs one at a time, mixing gently after each addition.
  • Stir in vanilla extract and sour cream until combined.
  • Pour the cheesecake filling over the prepared crust and spread evenly.
  • Bake for 30–35 minutes or until the center is mostly set with a slight jiggle.
  • Allow cheesecake to cool while preparing the topping.
  • In a saucepan, combine blueberries, sugar, lemon juice, water, and cornstarch.
  • Cook over medium heat until the mixture thickens and becomes glossy.
  • Let the blueberry topping cool slightly, then spread evenly over the cheesecake layer.
  • Refrigerate the bars for at least 4 hours or overnight until fully chilled and firm.
  • Slice into bars and garnish with whipped cream, fresh blueberries, or lemon zest before serving.
