2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 ripe bananas, mashed
½ cup granulated sugar
¼ cup brown sugar
½ cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup fresh blueberries
Preheat the oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large bowl, mash the ripe bananas until smooth.
Add the melted butter, granulated sugar, and brown sugar to the bananas and mix well.
Beat in the eggs one at a time, then stir in the vanilla extract and milk or yogurt.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Avoid overmixing.
Gently fold in the blueberries.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Use very ripe bananas with brown spots for the best flavor and natural sweetness.Toss the blueberries lightly in flour before adding them to prevent sinking.Avoid overmixing the batter to keep the bread light and tender. This recipe can easily be turned into banana blueberry muffins by baking in muffin tins for about 18–22 minutes.
